Author and recipe creator Jill Glenn joins us this Fruit Fam Friday to discuss her favorite vegan and gluten-free recipes, nutrition hacks, and the importance of dessert.
About two years ago, I began following a plant-based diet, mostly for health purposes.Like many others, I struggled with knowing what to eat and finding recipes that were easy, healthy, delicious and vegan, so I began making my own. Whenever I'd share my cooking with friends and family, they were shocked at how good vegan and gluten free food could be. So many people I knew were asking me for my recipes, so I decided to start a blog to make sharing my recipes easier. That was about a year and a half ago. Today, my blog (Peanut Butter and Jilly) has over 200,000 followers on Instagram. I am certified in nutrition so I try to make sure that my recipes are healthy(ish), super easy, and most importantly - delicious. I never could have imagined that so many people would enjoy my easy and tasty vegan and gluten free recipes. I feel very blessed.
It's cold outside, so one of my favorite dishes to make right now is my easy vegetable coconut curry. I love the complexity of the spices and how cozy the dish is. It's also super healthy which is great! Baked oatmeal is a year-round favorite of mine. Oatmeal is such a wholesome, nutritious, and yummy ingredient to incorporate into baking.
I’d absolutely be the Crunchables! Anyone who knows me knows that I LOVE apples. I eat one every day. I like the That's it. Crunchables because now I can enjoy my favorite fruit on the go.
